Most of the old advice is out of date, but not all of it. What encryption already protects, what it does not, and when a tunnel genuinely earns its place.
What already changed
Nearly all traffic is now encrypted in transit, so the classic image of someone reading your password from two tables away is largely obsolete.
Browsers also warn loudly about certificate problems, which closes the simplest interception attacks.
The café network can no longer read your bank login. It can still see every place you go and pretend to be somewhere you trust.
What is still exposed
The network still sees which sites you connect to, even when it cannot read the contents. On a hostile network that metadata is worth collecting.
Captive portals and lookalike network names remain effective: a laptop that automatically joins 'Airport_WiFi' will happily join a copy of it.
When a tunnel helps
An automatic encrypted tunnel removes the judgement call. It hides destinations from the local network and neutralises lookalike hotspots, without you deciding whether this particular café is trustworthy.
The key word is automatic. A protection you have to remember to switch on is a protection you will forget precisely when you are rushed.
